Sweet Thai Chicken Lettuce Wraps



Well I have to admit it, I have been on a real health kick since the start of the first of the year, and I also happen to love Ree Drummond, The Pioneer Woman! She has some fabulous recipes that are packed with rich and hearty veggies and taste oh so yummy! My favorite by far has to be the Thai Chicken Lettuce Wraps! I made them this evening and of course they were a hit. If you like Pei Wei's lettuce wraps these are a much healthier version! This recipe is super quick, easy, and will be a hit with the family!

Ingredients:
1/3 cup hoisin sauce
1/3 cup soy sauce
2 tablespoon grated ginger root
1 tablespoon Sriacha 
1 tablespoon rice wine vinegar 
3 cloves garlic (grated)
2 boneless chicken breast (cut into small strips)
2 tablespoons chopped peanuts
large lettuce leaves (I used Romain lettuce)
Rice Noodles (Optional) 

For the Marinade:
Mix all sauces, grated garlic, grated ginger with cut chicken strips in a Ziploc baggie and let refrigerate so that all of the juices will adhere nicely. After marinating process has taken place grill or fry chicken and spoon onto lettuce leaves. Sprinkle the chopped peanuts, I added the carrots and cucumber cut into shoestrings for flavor! Enjoy!
